We have put together a collection of the basic tools that you will need to do the normal daily maintenance required for years of repair-free use of your commercial equipment. This package includes:
First, you will get TWO Grouphead brushes. These should be used daily to scrub off the resins that will accumulate in the portafilters and on the shower heads. This is an indispensable tool that should be used (at least) daily.
Next, you will get ONE grinder brush, and ONE brass brush. The grinder brush is used for sweeping out the inner chamber of your coffee grinder at closing. The brass brush is for removing stubborn accumulations of almost anything. We don't recommend using the brass brush on the frothing wands. It will scratch them.
Next, you get ONE pick, and ONE stubby screwdriver. The pick is an all-around useful tool that can be used to clear frothing tips. It is especially useful for removing gaskets from the group heads. The screwdriver is useful throughout the day. Because they are stubby, they are just the tool you need to pry the portafilters out of the group handles. They can also be used to unscrew the showerheads for cleaning. The screwdrivers have reversible shafts with a flat head on one end, and a Phillips head on the other. Each screwdriver is two screwdrivers in one.
Then, you will get ONE counter-top brush that is handy to keep where you dust your mochas and/or cappuccino. It is very good for quickly sweeping cocoa powder or any other particulate matter off of your working surface.
And finally, you will get TWO 20-ounce bottles of Cafiza cleaning powder. You should use about a teaspoon in each group head at closing every night. See our article on how to maintain your equipment in the "Barista" section of our articles.
If you are dilligent in cleaning and maintaining your commercial espresso machine on a daily basis, you will go through the Cafiza pretty quickly. But the taste of your drinks will be of consistently high quality, and you will save lots of money on repairs in the long run.
